Grain-Free Zucchini Muffins

It’s that time of year again here in beautiful Cali when zucchini crops are abundant. My neighbors have transformed their 3/4 acre property into a sustainable garden, in which they grow a plethora of vegetables, fruit, and berries. Our properties sit against the foothills, so growing a garden without interference from the creatures who also reside here, is no small feat. As luck would have it, they usually have more zucchini than they can use and they know what a zucchini lover I am. Plus, I make them zucchini bread. Winning and winning.

My love of zucchini bread started because of Green Street’s famous zucchini bread which they serve alongside my favorite Diane Salad. Honestly, the best bread in the entire universe. BP (that’s before Paleo), I had copied their recipe pretty damn closely. As you know, baking gluten-free (grain-free) is a learning curve and I’ve never been able to come close to that recipe again.

Cue, Otto’s Cassava Flour. This miracle to the grain-free world makes baking “normal” again because it’s a one-to-one sub for wheat flour. Do you hear me singing the Hallelujah Chorus over here? Even though I couldn’t copy Green Street’s bread (too much sugar) exactly, I did find this recipe in Paleo Magazine, which I’ve modified for zucchini muffins. It’s super simple and they always turn out delicious! If you don’t have Otto’s flour, you can also use either coconut or almond flour. Happy summer!

5 large eggs, room temp
1/2 cup coconut oil (or oil of choice)
1 medium banana, broken into chunks
1/4 cup maple syrup
1/2 cup Otto’s cassava flour (or other grain-free flour)
1/2 tsp ground cinnamon
1 tsp baking soda
1/4 tsp sea salt
2 1/2 cups grated zucchini
1/2 chopped walnuts (optional)

Preheat oven to 350 F. Line muffin pan with liners (mine made 15 muffins).

In a food processor, blend all of the ingredients, except zucchini and walnuts, until smooth.
Pour the batter into a large bowl and stir in the zucchini and walnuts.
Bake for 30 minutes, until the toothpick comes out clean.
